integrate the acquired knowledge to describe the responsibilities and opportunities the food industry has towards promoting healthier diets.
Module Content
Focus of this module are pathophysiological aspects of nutrition, i.e., physiological mechanisms linking dietary choices to negative health outcomes.
Congenital diseases: galactosemia, phenylketonuria
Acute, immediate reactions due to intolerances or allergies to specific nutrients: lactose intolerance, various wheat-related disorders (coeliac disease, wheat intolerance), typical childhood food allergies, adult cross-reactivity reactions
Long-term consequences of unbalanced diets: obesity, type 2 diabetes, cardiovascular diseases
In all cases, typical diagnostic tools, prevalence, role of diet as a therapeutic measure will be discussed. Finally, possible challenges and opportunities for the food industry will be analysed.
